Steps:
- 1. preheat oven to 400°F. Spray 12 muffin cups with cooking spray; set aside.
- 2. In a medium bowl, combine flour, cornmeal, baking powder, and salt.
- 3. In a large bowl, combine eggs, corn syrup, and oil. Stir in the flour mixture until well blended. Stir in the corn, cheese, and chopped jalapeno. Spoon into prepared muffin cups.
- 4. Bake for 15 to 20 minutes or until lightly browned and firm to the touch. Cool in pan for 5 minutes on wire rack. Remove from pan and serve.
