Japanese Chess Pie image

This recipe came from my co-worker who makes it for everyones' birthdays! We all love it! I don't like raisins so I leave them out when I make it and slighty increase the coconut and pecans! It is so good! :)

1/2 cup butter, melted
2 eggs
1/2 cup raisins
1 teaspoon vanilla
1 cup sugar
1/2 cup pecans
1/2 cup coconut
9 inches pie shells

Steps:

  • Mix ingredients and pour into pie shell.
  • Bake at 350*F for 40-45 minutes.
  • If the pie does not appear to be set after 45 minutes, cook in five minute increments until it is slightly jiggly in the middle (a little like Jello) and allow to cool and it will set up.

I followed the recipe exactly, but my pie didn't turn out as good as I expected. The filling was a bit runny and the crust was too tough. I'm not sure what went wrong.

This pie was a bit too sweet for my taste, but overall it was still good. I think I'll try reducing the amount of sugar next time.

This recipe is a great starting point for a classic chess pie. I like to add a bit of lemon zest to the filling for a brighter flavor.
