Steps:
- Preheat oven to 350
- With electric mixer, cream together butter and sugar until fluffy. Beat in eggs, blend in ricotta cheese and vanilla
- In another bowl, stir together flour, baking soda and salt. Add to creamed mixture a little at a time, beating well.
- Line cookie sheets with parchment paper. Drop batter by tablespoon on paper (well spaced). Bake 12 minutes, do not allow cookies to brown. Cool on trays, then ice.
- Mix together last three ingredients for FROSTING
