I'm a vegetarian, so I substituted the turkey with tofu. It turned out great! The tofu absorbed all the flavors of the other ingredients and had a really nice texture.

This casserole is a great way to use up leftover mashed potatoes. I always have a lot of mashed potatoes left over after Thanksgiving and Christmas, and this is a great way to use them up.

I'm not usually a fan of tater tots, but they were surprisingly good in this casserole. The turkey and cheese helped to balance out the flavor and texture.
