Macaroni 'n' Cheese for Two image

From The Best of Country Cooking Cookbook, c. 2003. I love mac 'n cheese, but with just the hubby and I, there is always way too much. I love that this recipe is just for two - though I'm sure it could be doubled or tripled to feed more. Cooking time doesn't include cooking the macaroni.

1/3 cup sour cream
1/3 cup milk
1 cup shredded sharp cheddar cheese
3/4 cup elbow macaroni, cooked and drained
2 tablespoons chopped onions (optional)
paprika

Steps:

  • In a bowl, combine the sour cream and milk. Stir in the cheese, macaroni and onion. Transfer to a greased 2-1/2 cup baking dish; sprinkle with paprika. Cover and bake at 325* for 25 minutes or until heated through.
