Mandarin Orange Chicken image

This is a savory orange and chicken rice bake.

Number Of Ingredients 9

1 1/2 c uncooked long grain rice
4 boneless skinless chicken breasts cut in half
1 c sliced white or cremini mushrooms sliced
1 medium green pepper cut into match stick size
2 c fresh orange juice
1 c chicken broth, low salt
1 can(s) canned mandarin oranges
1/8 tsp paprika
2 Tbsp chopped fresh parsley

Steps:

  • 1. Spread rice in a greased shallow casserole baking dish. top with chicken, mushrooms and pepper. pour orange juice and broth over all.
  • 2. Cover and bake in 350F oven for 25 minutes remover cover top with oranges, parsley and paprika..over and bake for another 15 minutes or until chicken juices run clear and rice is tender. A tossed salad goes well with this dish.
