The only way you knew some of the things he put in it was to look in the kitchen garbage. Seriously, this is the truth. That is how my Mom and I found out he put in V8 juice cause he would get up at 3 am to start making...

- 1. Ingredients used
- 2. Put your beef cubes into a crockpot with 3 tbsp of olive oil. Sprinkle the beef cubes with salt. Cook on a medium heat for 3 hours. In a skillet brown your pork in a tad bit of olive oil and drain it.
- 3. In an 8 quart pot add your cooked meats, beer, chili beans, diced tomato (whole cans), sliced jalapenos, can of chipotle peppers and adobo sauce, green chilies, V8 juice and sofrito sauce. Add your spices. Cook for 3 to 4 hours on medium to low heat and the longer it cooks the more flavorful it gets. About 20 minutes before taking off the heat add your deboned roasted chicken meat, tamales and vanilla bean seeds.
- 4. Serve up your chili and garnish with cheese and sour cream.
