MEDITERRANEAN OPEN-FACED OMELET image

Yield 1 omelet

Number Of Ingredients 7

2 eggs, beaten/half cup egg substitutes
1 oz/quarter cup of feta cheese
3 sun-dried tomatoes, sliced
Quarter cup artichoke hearts, sliced
2 Tbsp cup kalamata/black/green olives, pitted and halved
2 Tbsp chickpeas
6-7 tiny, frozen pre-cooked shrimp

Steps:

  • 1. Cook shrimp, chickpeas and olives in skillet on medium-high until shrimp is warmed through. 2. Add tomatoes and artichoke hearts. 3. Pour eggs/egg substitute into skillet. Top with cheese. 4. Allow to cook until eggs are set.
