A refreshing cucumber salad for a summer with a kick. All the ingredients complement each other. Cumin adds a hint of smoky flavor. If you like heat then adjust the pepper flakes to your liking. This is great served as an easy side dish or with some tortilla chips. Either way you serve it, you can't go wrong with this cucumber...

I used Greek yogurt instead of sour cream in the dressing and it was just as good. This is a great way to lighten up the salad without sacrificing any flavor.

I'm not a fan of cilantro, so I used chopped parsley instead. It was still delicious!

This is a great make-ahead salad. I usually make it the night before and let it sit in the fridge overnight. The flavors really meld together and it tastes even better the next day.

I used a combination of fresh corn kernels and frozen corn kernels, and it worked out great. I also added a bit of chopped red onion for a little extra crunch.

I was a bit skeptical about the combination of corn and cucumber, but I was pleasantly surprised at how well they worked together. The dressing is also perfectly balanced, with just the right amount of sweetness and acidity.
