Mexican Skillet Casserole image

Made this often when my kids were little and have shared it with friends and even the pickiest of eaters has always loved it. I hope anyone who tries it enjoys!

Number Of Ingredients 8

1 lb ground meat
1 can(s) ranch style beans
1 can(s) whole kernel corn
1 can(s) rotel tomatoes
1 1/2 c instant rice (uncooked)
1 c water
1 c cheddar cheese, shredded
1 pkg taco seasoning mix

Steps:

  • 1. In skillet brown ground beef with taco seasoning and drain fat.
  • 2. Pour instant rice in the skillet and stir to mix with the meat.
  • 3. Add the corn, beans, tomatoes, and water, stir and cover and let simmer on low heat for 10 minutes.
  • 4. Remove lid and cover with cheese replace lid and let stand for 5 minutes allowing cheese to melt.
