Microwave Vegetables image

Sometimes when I'm out of time I make this colorful mix of crunchy vegetables that is super quick and easy to make. Sweet corn, red pepper, and peas are cooked together in a microwave, then seasoned with chopped cilantro.

Number Of Ingredients 6

1 red bell pepper, chopped
1 tablespoon extra-virgin olive oil
7 ounces frozen peas
1 (12 fluid ounce) can canned sweet corn, drained
1 teaspoon chopped fresh cilantro
salt and pepper to taste

Steps:

  • Combine red bell pepper and olive oil in a microwave-safe bowl. Microwave at full power until softened, about 1 minute. Add peas and cook at full power for an additional 2 minutes. Add corn and cook for 1 more minute. Stir vegetables and microwave for 30 seconds more. Add cilantro and season with salt and pepper. Stir and serve immediately.
