OATMEAL RAISIN PECAN COOKIES image

Yield 24 cookies

Number Of Ingredients 13

1 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 1/2 cups oats (not instant)
3/4 cup raisins
1/2 cup chopped pecans
1 stick butter (1/2 cup) softened
1/2 cup sugar
1/2 cup dark brown sugar
1 large egg
1 tsp vanilla

Steps:

  • Preheat oven to 350. Mix first 5 ingredients together in a bowl. Add the next 3 ingredients, stir together, and set aside. In a separate, large bowl, cream together the wet (last 5) ingredients. Then add the dry ingredients and mix with a fork. Use approximately 2 tablespoons of dough per cookie. Bake 12 minutes. Do not over bake. Do not allow edges to brown. The cookies will look under done when removed from the oven.
