PATTY'S KILLER NOODLE SALAD image

12-15 oz. chuka soba noodles (chow mein)
1 large carrot, peeled and grated
1 cup dry roasted salted peanuts, coarse chop
2 cloves garlic, minced
1 cup fresh cilantro, coarse chop
5-6 drops sesame oil
2 Tbls. white sugar
1/2-3/4 cup rice vinegar
3/4-1 cup soy sauce, I prefer the low sodium variety
juice and zest of 1 large lime
2 teas chili flakes or chili paste

Steps:

  • Crunch dry noodles in their package to break them into more manageable lengths. Boil noodles until tender. Drain and set aside to cool. In a large salad bowl combine garlic, sesame oil, sugar, vinegar, soy sauce, lime zest and juice, and chili. Mix a bit until sugar dissolves. Toss in carrot, peanuts and cilantro. Run noodles under cold water and drain but still wet. Add to bowl and toss with other salad ingredients until evenly distributed. Cover and chill for at least an hour. When ready to serve give the salad another good stir. If it seems a little dry just add a little more vinegar and soy sauce.
