Peach Glazed Cornish Hens with Ginger image

Cornish hens are a favorite around here because we each get to enjoy both the white and dark meat.

Number Of Ingredients 10

2 cornish hens, split (1 1/2 pounds to 2 pounds each)
1/2 tsp salt
1 c dried peaches, chopped
1/4 c fresh orange juice
1 green onion, sliced
2 Tbsp fresh ginger, grated
2 Tbsp brown sugar
2 Tbsp fresh lime juice
1 Tbsp soy sauce
1 Tbsp vegetable oil

Steps:

  • 1. Place hens, skin side up, in a 13 x 9 x 2 inch baking dish. Sprinkle with salt; broil 6 inches from the heat 3 to 5 minutes or until the skin is lightly browned. Remove from the oven.
  • 2. Combine peaches and remaining ingredients in a small saucepan. Cook over medium heat 5 minutes, stirring occasionally.
  • 3. Pour sauce over the hens. Bake uncovered, at 375° for 30 minutes or until done.
