1 teaspoon vegetable oil
8 strips bacon, finely chopped
1/2 cup finely chopped onion
1/2 cup finely chopped cilantro leaves
2 cups long-grain white rice
1 (10-ounce) can chopped tomatoes and green chiles
1 teaspoon dried oregano
1 teaspoon ground cumin

This dish was amazing! The flavors were so rich and complex. The pigeon peas were perfectly cooked and the sofrito was incredibly flavorful. I will definitely be making this dish again soon.

This dish was a bit too bland for my taste. I think I would add more spices next time. The pigeon peas were also a bit tough. Maybe I didn't soak them long enough.

This recipe was a bit too spicy for my taste. I think I would use less adobo next time. The pigeon peas were also a bit mushy. Maybe I cooked them too long.
