1/2 cup packed, jarred pimentos, finely chopped
1/4 cup mayonnaise
1 tablespoon brine, reserved from pimento jar
1 clove garlic, finely chopped
Kosher salt and freshly ground black pepper
Hot sauce, such as Tobasco
16 slices toasted whole wheat sandwich bread
16 slices tomato
8 leaves red-leaf lettuce

Steps:

  • Finely grate the cheese and transfer to a food processor. Add the peppers, mayonnaise, brine and garlic. Season with salt, pepper and hot sauce. Pulse until slightly chunky.

1/2 cup light sour cream

8 ounces reduced-fat sharp cheddar cheese, finely shredded
8 ounces reduced fat white cheddar cheese, finely shredded
8 slices bread
2 medium tomatoes, sliced

1 tablespoon extra-virgin olive oil
1/2 cup diced onion
1 large shallot, minced
1 teaspoon kosher salt
1 can (28-ounce) can whole tomatoes in juice, chopped (retain juice)
1 tablespoon tomato paste
1 cup vegetable broth
1 bay leaf
1/4 cup chopped fresh basil
1/2 teaspoon dried thyme leaves or 1 teaspoon fresh
2 tablespoons white rice flour
1 cup plain soymilk
