PINEAPPLE BARS image

3 20 oz. cans crushed pineapple
1 1/2 cups sugar
6 T. cornstarch
4 cups flour
1 tsp. baking powder
1 1/2 tsp. baking soda
1 cup sugar
1 cup butter
2 eggs
1/2 cup milk
1 T vinegar
1 1/2 cups powdered sugar
3-5 tsp. water
1/4 tsp. vanilla

Steps:

  • For filling: Place pineapple, sugar and cornstarch in a heavy bottom saucepan. Cook over medium heat, stirring occasionally until mixture comes to a boil. Turn down heat and simmer until mixture thickens. Pour into a bowl and set aside to cool. For dough: Sift together, flour, baking powder and soda. Set aside. Cream butter and sugar till light and fluffy. Add eggs and incorporate. Add milk and flour alternately until dough leaves the side of the bowl. (add more flour if necessary) Remove from mixer and divide in half. Roll half of dough into a 15x10" jelly roll pan with high sides. Pour filling over dough. Roll remaining dough between two sheets of waxed paper to fit top of pan. Remove one side of paper and "flip" the dough to fit. Remove waxed paper and seal edges of dough. Bake in a 400 degree oven for 25 min or until light golden brown. Cool completely Combine powdered sugar, water and vanilla till a medium consistency glaze is formed. Pour over bars and allow to set. When completely hardened, cut bars on the diagonal into diamond shaped pieces. Enjoy!
