Pineapple-Coconut Drop (soft) Cookies image

These cookies were always in great demand at our house whenever I made them. Our 5 children loved the pineapple-coconut combination. The only problem was, I couldn't keep them on hand very long. I found this recipe in an Albuquerque newspaper sometime in the '60's and have made them many times since then.

These cookies were a bit too crumbly for my taste, but they were still good. I think I'll try chilling the dough for longer next time.

I'm not a big fan of pineapple, but I still liked these cookies. The coconut flavor is really strong and it balances out the pineapple.

These cookies were a disaster! They were dry and crumbly and they didn't have much flavor. I followed the recipe exactly, so I'm not sure what went wrong.
