Pineapple-Mint Relish image

Number Of Ingredients 5

1/2 large pineapple, peeled, cored, cut into 1/4-inch pieces (about 3 cups)
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped red onion
1/4 cup chopped fresh mint
2 teaspoons grated lemon peel

Steps:

  • Stir all ingredients in large bowl to blend. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover; chill.)
