These medallions are a great way to get your kids to eat their vegetables. My kids loved the crispy coating and the cheesy center.

I love how easy these medallions are to make. I just threw everything in the food processor and pulsed it a few times. Then, I formed the mixture into medallions and baked them in the oven. They were done in no time!

These potato and broccoli medallions were a hit with my family! They were crispy on the outside and tender on the inside, and the broccoli added a nice pop of color and flavor.
