3 tablespoons butter
1 small onion, finely chopped
1 cup arborio rice or 1 cup other short-grain rice
1 cup frozen peas
2 1/4 cups chicken broth

Stir in additional one tablespoon of butter, Parmesan cheese and pepper. Let sit until butter and cheese melts. Stir thoroughly and serve.

This pressure cooker risotto is a lifesaver! I'm not the most patient cook, so I usually avoid recipes that take forever. But this one is so quick and easy, I can have a delicious risotto on the table in no time.
