Pumpkin Applesauce Squares. image

This recipe was in a box of loose recipes I'd cut out of magazines and newspapers. I'm posting it here so it won't get lost. UPDATE: I made these and they are delicious. I wasn't sure how pumpkin and applesauce would taste together. The predominate flavor to me was the molasses. I used all white flour and butter. The texture is more like a cake than a square. I did cream the butter, sugar, molasses, brown sugar, applesauce, eggs and pumpkin before adding the dry ingredients.

Number Of Ingredients 12

1 cup sugar
1 cup butter, softened or 1 cup soft margarine
3/4 cup molasses
1/2 cup brown sugar
3 cups flour (can be a mixture of WW and white)
2 teaspoons baking soda
3/4 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon clove
1 cup pumpkin
1 cup applesauce
2 eggs, beaten

Steps:

  • In a mixing bowl combine all of ingredients till well blended,then beat 3 minutes more.
  • Spoon into a greased 15"X10" jelly roll pan.
  • Bake in 350° oven for 30-35 minutes.
  • Cool pan in wire rack.
  • Cut into 2 1/2 inch squares.
  • Makes about 2 dozen.

I'm allergic to nuts, so I used chopped dried cranberries instead of walnuts. They worked great!

These squares were delicious! The only thing I would change is to use a different type of frosting. The cream cheese frosting was a little too rich for me.
