I made this up over Christmas holiday when I was faced with a can of pumpkin and a cake mix to make a dessert. The results were delicious!

Time 45m

Number Of Ingredients 17

1 box yellow cake mix
3 eggs
1/2 c oil
1/2 c applesauce
1 can(s) pumpkin, 16 oz.
1 c walnuts, chopped
1 Tbsp pumpkin pie spices
1 tsp vanilla
1/2 tsp orange peel
1 Tbsp orange juice (optional)
CREAM CHEESE FROSTING
1 pkg cream cheese, 3 oz (softened)
2 c powdered sugar
6 Tbsp butter, softened
1 Tbsp milk
1/2 tsp vanilla
1 tsp orange juice

Steps:

  • 1. Mix all ingredients for bars until well blended.
  • 2. Pour into greased 9x13 pan.
  • 3. Bake at 350 degrees for 35 minutes.
  • 4. Remove to cooling racks until completely cool, then frost with cream cheese frosting.

These bars were a bit too dense for my liking. I think I'll try a different recipe next time.

These bars were a little too sweet for my taste. I think I'll try reducing the amount of sugar next time.

Delicious! I used pecans instead of walnuts and they were still amazing.

These pumpkin nut bars were a hit! They were moist, flavorful, and had the perfect amount of crunch from the walnuts. I'll definitely be making these again.
