1 1/2 cups canned chick-peas, drained and rinsed
1 tablespoon Dijon mustard
3 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
2 garlic cloves, minced
1/2 cup chopped fresh parsley
1 cup thinly sliced red onion
1 red bell pepper, diced
salt
fresh ground black pepper

Steps:

  • In a large bowl, whisk together the mustard, lemon juice, olive oil and vinegar, stir in the garlic, parsley, onion and bell pepper.
  • Gently toss the beans and dressing and season with salt and pepper to taste.
  • Serve chilled or at room temperature.
