RICE AU GRATIN image

Yield 6 456 cal

Number Of Ingredients 12

1/2 medium onion
1 clove garlic, minced
2 tbsp olive oil
1 1/2 cups rice
1 tbsp dried parsley
3 cups stock
1 cup boiling water
1/2 cup sun dried tomatoes cut up
2 cups grated cheddar
2 tbsp butter
1 tsp curry
2 slices bread crumbled

Steps:

  • Saute the onion and garlic in oil over medium heat about 3 minutes. Add rice and cook 2 minutes. Add the parsley and stock, stir, cover and cook 15 minutes. Check if rice is tender. While rice is cooking pout boiling water over dried tomatoes and let sit (or use tomatoes in oil) . Toss the finished rice with tomatoes and cheese. Transfer to buttered baking dish and top with a little bit of the cheese. Bake at 350 degrees for 10 - 15 minutes.
