Yield 6

Number Of Ingredients 8

1 (14 ounce) package macaroni and cheese mix
1 ½ pounds ground beef
½ cup chopped green bell pepper
½ cup chopped onion
1 teaspoon salt
1 teaspoon cayenne pepper
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
3 slices American cheese, or more to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook macaroni noodles, without the cheese powder packet, until almost tender and firm to the bite, about 7 minutes.
  • In the meantime, heat a large skillet over medium-high heat. Add beef, bell pepper, and onion; cook until beef is browned and crumbly, 6 to 7 minutes. Season with salt and cayenne pepper. Drain and discard grease if desired.
  • Drain macaroni and place in a casserole dish. Add the cheese powder packet, diced tomatoes with green chiles, and the sauteed beef and vegetables. Stir well. Lay American cheese slices on top, covering filling as well as possible.
  • Bake in the preheated oven until piping hot throughout and cheese is melted, 15 to 20 minutes. Let cool briefly before serving.

I was disappointed with this recipe. It was too salty and the cheese was not melted properly.

This was a good recipe, but I found it to be a little too bland. I would add more spices next time.

This recipe was easy to follow and the dish turned out great! The only thing I would change is to add a little more salt and pepper. Otherwise, it was perfect.

This dish was easy to make and turned out great! I used ground turkey instead of beef and it was still delicious. I also added a can of black beans for some extra protein and fiber. Will definitely be making this again!

I'm not a big fan of Rotel, but I decided to give this recipe a try anyway. I'm glad I did because it was really good! The cheese and beef were the perfect combination and the Rotel added just the right amount of spice. I will definitely be making th

I've made this dish several times and it's always a crowd-pleaser. The only change I make is adding a can of corn. It adds a little sweetness and crunch that I love. I also like to top it with sour cream and guacamole when I serve it.

This recipe was a hit with my family! The combination of ground beef, Rotel, and Velveeta is always a winner. I found that using a pound of ground beef was the perfect amount for my 9x13 inch baking dish. The dish was cheesy, flavorful, and oh-so-goo
