Sassy sausage & bean soup image

Delicious, filling and "good for you soup." Calories: 183 Fat: 7 grams Carbs: 21 grams.

1/2 c chopped onion
2 tsp minced garlic
2 Tbsp olive oil
6 oz sundried tomato & chicken sausage, such as from al fresco, sliced into 1"-slices
1 15 oz can small white beans, drained
1/4 c finely chopped red bell pepper
1 15 oz can black beans, drained
1 tsp dried oregano
2 14.5 oz cans reduced-sodium chicken broth
2 c escarole, trimmed and chopped.

Steps:

  • 1. In lg dutch oven or lg pot, over med-high heat, Cook onions and garlic in oil, cook 2 min. Add sausages and cook, stirring for about 4 min, or until they are browned. Stir in remaining ingredients. Put on high, bring to a boil. Reduce heat to medium and simmer about 10-15 min, or until sausages are fully cooked and soup is heated through.
