Time 1h10m

Yield 10 serving(s)

Number Of Ingredients 8

1 lb mild ground pork sausage
1 lb hot ground pork sausage
30 ounces frozen hash browns
1 1/2 teaspoons salt, divided
1/2 teaspoon pepper
1 cup shredded cheddar cheese
6 large eggs
2 cups milk

Steps:

  • Cook sausages in a large skillet over medium-high heat, stirring until sausage crumbles and is no longer pink (there is where I added bell peppers and onions).
  • Prepare hashbrowns according to package directions, using 1/2 teaspoon salt and pepper.
  • Stir together hash browns, sausage, and cheese. Pour into a lightly greased 13x9 inch baking dish.
  • Whisk together eggs, milk, and remaining teaspoon salt. Pour evenly over potato mixture.
  • Bake at 350 for 35 to 40 minutes.
  • This is still terrific days later -- .

The sausage in this casserole was a little too spicy for me. I'll probably use a milder sausage next time.

This casserole was a little too dry for my taste. I think I'll add some more milk next time.
