SEA BASS WITH BASIL SAUCE image

Number Of Ingredients 12

3 cups (packed) fresh basil leaves
1 1/2 cups (packed) fresh Italian parsley
1/2 teaspoon grated lemon peel
1 small clove
6 tablespoons olive oil
2/3 cup fish stock or bottled clam juice
1 shallot, chopped
2 tablespoons fresh lemon juice
1 tablespoon whipping cream
1 tablespoon butter
1/2 teaspoon hot pepper sauce
4 6-ounce (1 1/4 inch-thick) sea bass fillets

Steps:

  • Preheat broiler. Puree first 4 ingredients and 4 tablespoons oil in processor. Bring stock and next 5 ingredients to simmer in medium saucepan. Add basil puree; stir just to heat through. Season with salt and pepper. Meanwhile, place fish on rimmed baking sheet. Brush with 2 tablespoons oil. Sprinkle with salt and pepper. Broil until fish is opaque in center, about 4 minutes per side. Spoon sauce onto plates. Top with fish
