This soup is a great way to use up leftover butternut squash and cauliflower. It's also a healthy and delicious meal. I served it with a side of whole-wheat bread.

This soup was easy to make and very tasty. I used a combination of vegetable broth and coconut milk, which gave it a rich and creamy flavor. I also added a bit of cayenne pepper for a little spice.

I'm not a huge fan of butternut squash, but I really enjoyed this soup. The cauliflower mellowed out the sweetness of the squash, and the curry powder added a nice kick. I'll definitely be making this again.
