Number Of Ingredients 9

4 tablespoons Unsalted butter
4 tablespoons All-purpose flour
1 head Onion, small, finely diced
1 clove Garlic, finely diced
1 cup Milk
1/4 teaspoon Salt & Pepper
1/8 teaspoon Nutmeg
1 tablespoon Unsalted butter
1 bag Baby Spinach (12 oz./1 bag)

Steps:

  • Melt 4 T. butter in pot over medium heat. Sprinkle in flour and whisk to blend into a paste. Cook for 5 min., or until light golden in color. Mix in onion and garlic and cook for 1 min. Whisk milk in slowly until combined. Let cook 5 min., while the spinach is prepared.
  • To prepare spinach, melt 1 T. butter in a separate pot over medium heat. Add spinach by the handful and toss occasionally to coat. Cook for 4-5 min., or until spinach is wilted but not soggy - it should be bright green and the stems should still have a crunch to them. Remove from heat.
  • Season the sauce with salt, pepper and nutmeg to taste. Add spinach to the sauce, folding to combine.
  • Plate immediately or serve in a warmed dish. Enjoy!

This recipe is a waste of time. The creamed spinach was not worth the effort.

I followed the recipe exactly, but my creamed spinach turned out watery. I'm not sure what went wrong.

The creamed spinach was a bit bland. I think I'll add some more garlic and onion next time.

This recipe is a bit too rich for my taste. I think I'll try using less cream next time.
