3 tablespoons olive oil
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/4 cup balsamic vinegar
2 tablespoons brown sugar
6 cups finely sliced red cabbage

I made this soup with chicken broth instead of vegetable broth and it was still delicious! I also added a little bit of cayenne pepper to give it a bit of a kick.

This soup was a bit too sour for my taste, but I think that's just because I'm not a big fan of vinegar. I think it would be perfect for someone who likes sour flavors.

I'm not a huge fan of cabbage, but this soup was actually really good! The sweetness of the apples and the tanginess of the vinegar really balanced out the cabbage flavor.
