3 large sweet potatoes
1 cup cranberries, chopped
1/4 c raisins
1/2 c walnuts
1/2 c sesame seeds
2 tablespoons honey
1/2 t cinnamon

Steps:

  • Preheat oven to 350 degrees. 1. Bake sweet potatoes until tender. 2. Cut in half lengthwise. Spoon out centers. 3. Mix potato and all other ingredients. Mound in shells and bake for 20 minutes, or until hot.

My sweet potato boats turned out a little dry, but the flavor was still good. I think I'll try adding a bit more moisture to the filling next time, maybe some salsa or diced tomatoes.
