Steps:
- Grate/julienne sweet potato. Dip fish in egg, then lightly flour. Heat oil in pan or griddle, add big handful of grated sweet potato, lay fish on top, add more sweet potato on top, and then sprinkle top with more oil. Cook/blanch beans. Meanwhile, make dressing by whisking together all dressing ingredients. Lay greens on plate. Cube mango and arrange around the outside. Lay green beans in middle, top with fish, and spinkle with dressing.
