Steps:
- Preheat oven to 375 degrees F. Spray a baking pan with nonstick spray and add the peppers to it so that they are standing on their bottoms. Bake for 15 minutes, then add 2 tablespoons water to the pan and cover with aluminum foil. Bake for an additional 5 to 7 minutes, until peppers are softened. Remove from heat and set aside to cool. Meanwhile, bring a large nonstick skillet to medium heat, then add beef and onions. Cook, breaking up meat with a spoon and cook until no longer pink. Drain grease off of meat and stir in taco seasoning, along with the amount of water the package calls for. Cook for 4 to 5 minutes until thickened. Stuff cooled peppers with lettuce, meat, then top with cheese, sour cream and salsa. Serve with tortilla chips if desired.
