Time 45m

Yield 12 to 15 broccoli cakes

Number Of Ingredients 9

Nonstick cooking spray, for the baking sheet
1 cup grated broccoli florets (see Cook's Note)
1 cup grated cauliflower florets
2 eggs, beaten
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 tablespoon chopped capers, optional
Kosher salt
Freshly cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F. Spray a baking sheet with nonstick cooking spray.
  • In a large bowl, combine the broccoli, cauliflower, eggs, breadcrumbs, Parmesan cheese, capers if using and a healthy pinch of salt and pepper. Mix everything together with your hands until everything sticks together. Using your hands, make patties out of the mixture, about 2 inches across, and place onto the prepared baking sheet.
  • Bake the cakes for 15 minutes, then flip and let cook for another 15 minutes.

I've made these cakes several times now, and they're always a hit. They're so easy to make, and they're a great way to use up leftover broccoli.

These cakes were a bit too oily for my taste. I think I'll try baking them next time instead of frying them.

I was really excited to try these cakes, but they were a bit disappointing. They didn't have much flavor, and the texture was a bit mushy.

I love that these cakes are a healthy alternative to traditional potato pancakes. They're also gluten-free, which is a bonus for me.

These cakes were a bit bland for my taste. I added some extra garlic and onion, and that helped a lot.

I followed the recipe exactly, but my cakes turned out a little too dry. I think I might add an extra egg next time.

These broccoli cakes were an absolute delight! They were crispy on the outside and tender on the inside, with a wonderful balance of flavors. I served them with a side of roasted potatoes and a simple green salad, and it was a perfect meal.
