Thai Shrimp Curry image

This is so easy to throw together. I have been able to get this on the table pretty fast when I've had unexpected company, and it is a big hit. I like to serve it over couscous or basmati rice. (Make sure you use unsweetened coconut milk, not sweetened coconut cream.)

Overall, I thought this recipe was pretty good. It was easy to make and the flavors were good. I would definitely make it again, but I would make a few changes to suit my own taste.

This curry was a bit too watery for my taste. I would recommend reducing the amount of coconut milk or adding some cornstarch to thicken it up.

The shrimp in this curry were a bit overcooked. I would recommend cooking them for a shorter amount of time.

I found this recipe to be a bit too bland. I added some extra curry paste, fish sauce, and lime juice to give it more flavor.

This curry is a bit spicy, so if you don't like spicy food, you may want to reduce the amount of chili paste. Or you can add sugar or honey to reduce spicyness
