Steps:
- Place chicken in an ovenproof dish. Mix spring onion through lime juice and coat chicken with mixture. Cover the chicken lossely with saran wrap and marinate in a cool place for several hours or overnight in fridge. Preheat oven to 375 degrees. Remove saran wrap and cover dish with foil. Bake chicken for 45 minutes to 1 hour, then remove foil and cook a few more minutes until brown. Serve hot with rice, garnishing with lime juice and cilantro.
