30 cherry tomatoes
1/2 small red onion, finely chopped
1/4 cup mint, fresh & finely chopped
3 tablespoons extra virgin olive oil
1 lemon, juice
1 lemon, zest of
salt
pepper

Steps:

  • Slice tomatoes in half and place in bowl.
  • Add onion and mint to tomatoes and mix.
  • Drizzle with olive oil and lemon juice.
  • Sprinkle the lemon zest on top.
  • Salt and pepper to taste.
  • Let salad marinate for 20 minutes before serving.
