TOO TANGY TUNA SALAD FOR TWO image

2 6oz. cans solid white Albacore tuna in water, drained
2 hard boiled eggs, cooled and chopped
2 tablespoons chopped celery
2 tablespoons chopped red onion
2 tablespoons mild diced chilies, drained
2 teasponns jalapeƱo peppers, diced
2 teaspoons cilantro, chopped
2 tablespoons mayonnaise
2 tablespoons sour cream
2 teaspoons prepared yellow mustard
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon bottled roasted chipotle hot sauce

Steps:

  • Place the tuna in a medium bowl and separate the large pieces with a fork. Add the next 6 ingredients and mix lightly. In a small bowl mix the remaining ingredients until smooth and add this to the tuna mixture. Serve on Boston lettuce.
