Turkey Croquettes image

Easy as pie to make and great for those on a budget!

Number Of Ingredients 10

3/4 lb thick sliced turkey from the deli (great if you have left over turkey)
8-10 slice bread
1/4 c chopped onion
3 Tbsp butter
1/2-1 tsp poultry seasoning
1 jar(s) turkey gravy
1/4-1/2 c water
1/2 c bread crumbs
1/4 c club crackers, crushed
1/2 c chicken breading mix ( i use martha washington)

Steps:

  • 1. Melt butter in pan over med low heat, add onion and saute til soft, add 3 tblspn of the gravy and the waterand 1/4 tsp of poultry seasoning and simmer.
  • 2. Break bread up into pieces and mix rest of poultry seasoning, add 1/4 of chicken breading mix. Mix the turkey in the bread add the onion mixture and mix together.
  • 3. In a med size bowl add bread crumbs, chicken breading mix and crushed crackers. Use an ice cream scoop and scoop a ball of turkey croquette mix and roll until ball is covered. Take the croquettes and refrigerate 1/2 hr. (I like to put mine in the freezer for an hour or so)
  • 4. Preheat oven to 350, bake on a greased cookie sheet for 30 minutes until golden and crispy. Heat the rest of gravy to serve with the croquettes.
