Turkish Salad Gavurdagi image

This "bright" and refreshing salad, from turkikshcookbook.com has all my favorite ingredients. We like to use Recipe #100777 to scoop up the salad, although lavosh would work, too! Named after a mountain in southeast Anatolia. Sumac is available in Middle Eastern shops or online. It will make a huge difference if you use the freshest, best tomatoes and freshest parsley you can find.

I love the simplicity of this salad. It's made with just a few fresh ingredients, but the flavors are amazing. I especially appreciate that it's a vegan dish, so I can enjoy it without any guilt.

This salad is a great make-ahead dish. I made it the night before and it was even better the next day. The flavors had time to meld together and the vegetables were even more tender.

I'm not usually a fan of eggplant, but this salad changed my mind. The roasting process mellows out the eggplant's bitterness and gives it a lovely smoky flavor. Paired with the fresh vegetables and zesty dressing, it's a salad that I'll definitely b
