My son was at a party and he had came home raving about how good these were, so I called and got the recipe from another Mom. They are very good and pretty quick fix for super.

Steps:
- Saute onion, rotel, spices and chicken in a bit of the oil until hot. (I use a rotisserie chicken from the supermarket and I like to slice fresh mushrooms in to this mixture also).
- Spread some sour cream on 5 tortilla shells. I like it kind of thick.
- Spread the chicken and vegetable mixture, I use quite a bit.
- Sprinkle with cheese then top with another tortilla shell. Mash it down.
- Fry them in a bit of vegetable oil in a nonstick skillet for a couple of minutes on each side.
