Watercress and Apple Salad with Peanut Yogurt Dressing image

3/4 lb apples (2), cored
1 tablespoon fresh lime juice
2 tablespoons smooth peanut butter
1/4 cup plain yogurt
1 tablespoon water
1/4 teaspoon salt
8 cups watercress sprigs (2 to 3 bunches)

Steps:

  • Cut apples into 2-inch-long matchsticks, then toss with 1 teaspoon lime juice. Whisk together peanut butter, yogurt, water, salt, and remaining 2 teaspoons lime juice, then toss with apples and watercress.
