Winter Meatloaf image

I found this recipe in an issue of Prairies North (winter 2009). This is a hearty Canadian meatloaf and a true comfort food. Just the thing on a cold and windy winter's night that warms the body and soul. Serve this with some good old fashioned mashed potatoes and some baby carrots with butter.

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 15

3 slices hearty white bread, crusts removed
1 cup milk
1 egg
1/2 onion
1 teaspoon fresh thyme (1/2 tsp dried)
1 tablespoon apple cider vinegar
1 lb lean ground beef
1/2 lb pork sausage, casings removed
2 tablespoons fresh dill, chopped
1 teaspoon salt
pepper, 3 grinds
1 tablespoon tomato paste
1 tablespoon honey
1 teaspoon brown mustard
1 pinch ground coriander (a fat pinch)

Steps:

  • Break the bread into a large bowl.
  • In a blender or food processor, combine the milk, egg, onion, thyme, and vinegar.
  • Pour over the bread and mix well. Allow enough time for the bread to soak up the milk.
  • Add meats, dill, salt and pepper, mixing throughly.
  • Pat the mixture into a loaf pan.
  • Stir together the tomato paste, honey, mustard, and coriander. Spread over meat loaf.
  • Bake at 350* for 1 hour.
  • For a brown crust, turn on the broiler at the end of cooking.

This recipe is a waste of time. The meatloaf was bland and flavorless.

I'm not sure what went wrong, but my meatloaf turned out dry and crumbly. I'm going to try again with a different recipe.
