Number Of Ingredients 11

1 lb ziti pasta (or whatever type you like!)
1/3 c olive oil
1 clove garlic, chopped (can used jarred garlic)
1/4 c butter
2 small zucchini, quartered and sliced
1 onion, chopped
1 tomato, chopped
8 oz mushrooms, fresh, sliced
1 Tbsp dried oregano
1 Tbsp paprika
salt and pepper to taste

Steps:

  • 1. Bring a large pot of lightly salted water to a boil. Add pasta and cook according to package directions or until al dente; drain. "Al dente" means the pasta is tender, but still firm to the bite.
  • 2. In a large skillet over medium heat, melt the butter with the olive oil and saute the garlic, zucchini, onion, tomato, mushrooms, oregano, paprika, salt and pepper for 15 to 20 minutes. Combine the pasta and sauteed vegetables and toss.
