These beans come from Adobe Milling in Dove Creek in Colorado. Anasazi Beans are sweeter than a Pinto Bean, cook faster and what great about them is you donĀ“t have to soak them.

1 lb anasazi beans
1 large onion, cubes
2 ham hocks
salt
pepper
1/2 gallon reduced-sodium chicken broth

Steps:

  • Soak the beans overnight and drain off the water.
  • In a large pot add beans, ham hocks, onion, salt, pepper and broth and simmer until the ham hock and beans are tender.
