Yield 1 loaf

Number Of Ingredients 7

3 overripe bananas
1 cup sugar
1 egg, room temperature
1 1/2 cups flour
1/4 cup melted butter
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Mash bananas (I use potato ricer because kids love tools) in large mixing bowl. Stir in other ingredients. Lightly grease and flour one 8 x 5" loaf pan. Pour batter into pan. Bake in preheated 325 degree oven for about one hour. Test for doneness with a toothpick. Cool in pan 5 minutes and turn out on rack to cool completely.
