Steps:
- Step 1 Preheat oven to 400°F. Lightly grease a 12- cup muffin pan with cooking spray or line with baking liners.
- Step 2 Place apple and granulated sugar in a medium bowl; toss to coat, and let stand 10 minutes.
- Step 3 Meanwhile, whisk together flour, brown sugar, baking powder, salt, and cinnamon in a large bowl.
- Step 4 Stir milk, melted butter, vanilla, and eggs into apple mixture; add to flour mixture, stirring until just combined. Divide batter evenly among prepared muffin cups.
- Step 5 Mix in banana to batter
- Step 6 Bake in preheated oven until a wooden pick inserted in center comes out clean, 18 to 19 minutes. Cool in pan 5 minutes
