Apple Muffins (Very Healthy) image

This recipe is from the Liver Cleansing Diet by Dr Sandra Cabot. It is very healthy and tastes great. I don't add the sultanas because I don't like them and if I don't have almond oil or soy milk, I use canola oil and fat free milk and they still turn out great.

I was pleasantly surprised by how easy these muffins were to make. I didn't have any applesauce on hand, so I used mashed bananas instead, and they turned out just as delicious.

These muffins turned out moist and flavorful, with a slightly sweet and tangy taste from the apples. I added a sprinkle of cinnamon sugar on top before baking, which gave them a nice crunchy topping.
